The Hidden gluten Free Diet Secret - How to Make Delicious Kosher Marshmallows
Kosher marshmallows and dandies are probably some of my favorite vegan treats ever! They taste just as good as any traditional marshmallow, but are made without any animal products. A big surprise just like that. And I do mean big! I was surprised by the amount of sugar it used, but it really doesn't account for the fact that it is so rich and creamy.
The recipe calls for some high quality powdered gelatin, but I would use a natural gluten-free gelatin. The ingredients list also calls for some liquid whey and corn syrup which can easily be found in your pantry. I had to go out today and get some. Because I didn't have any last night. I did though, and boy was I glad I did.
So I made a batch of vegan and gluten-free chocolate chip cookies and crackers. Since these foods are so rich, I decided to bake them in a 9 inch round pan. They turned out great, just as I remembered from my grandmother's recipes.
For my own tastes, I chose two simple, delicious foods: vegan chocolate chip cookies and a veggie sausage link. These vegan and vegetarian foods were surprisingly delicious. The vegan chocolate chip cookies were incredibly moist and had a nice crunch to them. I also enjoyed the slightly spicy sausage link as well.
The next time I thought about kosher marshmallows, I had to look at a different batch. What I discovered was that my family uses a very different process. My family likes to get their marshmallows "fresco" ready by using vegetable oil and bread flour. What they don't do is use any sort of flavorings or vegetable oils (gluten-free). This is not an easy, cheap, or even enjoyable way to prepare your marshmallows.

Instead, what I would suggest is to use a food processor. Any good food processor will take all of the guesswork out of this preparation. Once you've purchased your new processor, all you have to do is combine the flour, vegan fat (or oil), vegetable oil, and liquid flavorings. Then just blend away. You will be surprised how good your dandies will be, and you won't have to worry about them turning out like they normally do.
The key to making kosher marshmallows for a non-vegan diet is to use a food processor. Using a processor is much easier and more cost effective than using gelatin. By using a processor to mix the ingredients you eliminate gluten ingredients from the equation. By eliminating these ingredients you have essentially created a gluten-free marshmallow recipe that everyone will love.
It is also very important to purchase your gluten-free marshmallows from a company that clearly labels their marshmallows as such. Gluten free is becoming a more popular market in food circles. However, many companies still don't advertise that they are vegan or gluten free. Therefore, it is up to you to do your own research. If you see any ingredients that you can assume are considered gluten based, do not buy them.
The next thing you need to learn is how to mix up your marshmallows. Since there aren't any liquids in these recipes, it is impossible to beat them with a mixer. Therefore, you will want to use your food processor. Add the dry ingredients to the wet and beat until they are completely blended.
Kosher jet-puffed marshmallows are also great for a special event. When making your homemade treats for a church function, you can easily disguise the flavors with the addition of a little baking powder. For example, if you prefer dark chocolate, simply add a little extra cocoa powder.
Kosher dandies can be made in the same manner as traditional marshmallows. By using soy or rice flour, eggs, and sugar, the ingredients are perfectly safe for consumption by vegans. They are also very easy to store in your freezer for future use. Although not labeled gluten free, some manufacturers of vegan marshmallows also produce vegan dandies that are dandied instead of stuffed. As long as you are careful when mixing your marshmallows, you can use them in virtually any dessert recipe that calls for chocolate.
